Kuepper’s Chestnut Soup
- 3 cups chicken stock
- 3/4 cup whole milk
- 3/4 cup heavy cream
- 1 1/2 tablespoons Arborio rice, raw
- 3 cups chestnuts, roasted
- 1/3 cup diced celery
- 1/3 cup diced carrot
- 1/3 cup diced onion
- 1 teaspoon toasted sesame oil
- 1 ounce butter
- 1 1/2 cups corn kernels
Sauté chestnuts, celery, onion, and carrot in sesame oil and butter until onions begin to turn translucent. Add stock, milk, cream, and rice – simmer for one hour or until rice explodes. Purée, strain, and add corn. If desired add salt and pepper to taste.
